Great idea to trade down in the 1st (from #12 down to #20) and pick up an extra 2nd rounder (#51).

If DT Derrick Harmon was available, I would take him. If he is gone, trade down again towards the very end of the 1st round (from #20 down to either #30, 31 or 32) and pick up an extra 3rd and 4th round picks.

You would end up with:

1st round: #30
2nd round: #44 , #51
3rd round: #77 , late 3rd rounder
4th round: mid-to-late 4th rounder

This would give the Cowboys 6 draft picks within the first 4 rounds. Now go to school and draft for positions: DT, RB, WR, CB, Edge and LB

Use rounds 5 - 7 to address Oline, Safety, QB and another RB or WR.

I could actually be OK with this.

Personally, I know it's not high on the needs list, but I really want Warren.

Cowboys trade back to 20 and get pick 51.

The pick at 20 would be Emeka Egbuka, or Omarion Hampton, or Walter Nolen.

We don’t care about stopping the run.

Bingo. Only if the player has a pass rush and run stopping ability will they draft someone with a decent pick.
But it's always pass rush traits they look for first IMO.
