Chihuahuas. No, not the annoying little yip yip dogs. My wife's Grandmother lived in Lamesa Tx. which at the time had the oldest running drive in movie theater called the Sky View. While people went to see a move, the main attraction was the concessions stand. It burned down a couple of times and even had Buddy Holly play on the roof one time. While I missed all of that I did get to eat there a few times a year when we'd visit.
Everything they made was great from greasy cheeseburgers and onion rings to jalapeno corn fritters. What they were legendary for though was the Chihuahuas. Two corn tostadas topped with what they called chili. It was more like a really fine well seasoned tomato based ground meat. Then topped with their house made pimento cheese, shredded cabbage, and the other tostada to make a little sandwich. They came wrapped in paper with a pickled jalapeno wedged between the shells. They were absolutely amazing and the Sky View even had a patented on them.
The Sky View is permanently closed now but my wife recreates these pretty well. She grew up eating the real ones and says they aren't even close but I'm asking for them at least once a month.
