It is because Dez has no moves in his routes. He always does only a couple of different things and this makes him easy to defend. CS talks about it alot on the all-22 film he gets.

He is a straight line player when he runs his routes. He rounds them off and is imprecise. Peterson struggles with change of direction and cuts but he doesn't have to defend those against Dez. All he has to do is run with him and Dez cannot beat Peterson in a foot race. It was really a bad matchup for us. It is too bad we can't do more to free up Dez because of his limited knowledge of the playbook but that is one of his many limitations.

peterson is actually faster then Dez. Zona decided to mostly man Dez with Peterson. I guess you can say it worked for them since we could only score 13 points and they also pretty much shut down the run as well.
