I could be wrong, but I believe most potential professional athletes have insurance policies that pay out in case of a career ending injury. The Cowboys would only be liable if there was some sort of structural flaw that caused that accident or if one of it's employees went berserk and clubbed the guys leg. But if the player was walking and tripped over his own feet then he has to hope he has an insurance policy.

...most potential draft picks for the NFL, especially high rounds candidates, are counseled by their coaches and interested parties to go get insurance.

Just like many of them are counseled to stay out of trouble leading up to the draft, but we all know where that ends sometimes.

Like anywhere else in society there are smart ones and dumb ones. As for an injury inside the Cowboys facility, depends on the circumstances and where liability falls.

Besdies Jerry is smart and certainly carries all the necessary insurance to protect himself and the team against such kind of injuries either by visiting athletes or even his own. I also assume most NFL players carry their own insurance just in case. We all remember that Romo carried insurance to protect himself to the tune of $30M in 07 season should he even hurt his pinky before he signed franchise contract.

Somewhat related: This exact thing happened to Sam Clancy of USC when visiting the Suns for a workout. He was a pretty hot prospect at the time, came to workout for them and shredded his knee and killed his career. I know the Suns were not on the hook for it and I doubt a football team would be either.
