Quickie burritos (about 10 minutes):

1lb lean ground beef, thawed
1 can Jalapeno pinto beans
1 package burrito seasoning
1 package shredded cheese (I generally use the Mexican type with monterey jack)
1 package large flour tortillas
Hot sause or picante to taste.

Brown beef in large skillet.
Drain grease and add the pinto beans and seasoning.
Simmer until the sause thickens (about 5 minutes) then remove from heat.
Warm the tortillas a few at a time in a microwave. A few seconds will do, just enough to soften them.
Place two to three tablespoons of beef and bean mixture onto a tortilla and add cheese and hot sause or picante. I usually use Pace Medium picante, but I'm a wimp compared to some when it comes to hot stuff.
Roll up tortilla and eat!

Makes about 8 to 10 burritos.

Cook the meat with onions and green chiles----makes it even better

The picante has onion and jalapenos but like they say if a little is good, more is better, and too much is just right!

not the same as cooking the onions and green chilies with the meat ---
You might throw the picante away

Green Chili Chicken Enchilada Casserole

Boil 1 chicken and de-bone (Can substitute with you favorite rotisserie chicken from local market)
Put chicken in saucepan add

1 can cream of chicken soup

1 can cream of mushroom soup

1 – 1 ½ can of milk from above soup

1 white onion course chopped

Several green chilies, as many as you like as hot as you like

Salt to taste

Pepper to taste

Garlic powder to taste

Simmer over medium heat until warmed, should have a semi thick semi thin consistency



In 13 x 9 pan or larger, grease the bottom so stuff doesn’t stick.

Put some above mixture down first to coat pan

Cover with corn tortillas

Add mixture

Add cheese on top, we like Colby/jack mixture but use what you like

Add tortillas, mixture, cheese, etc.



Put in oven at 350 degree’s covered with foil for about 35 minutes, uncover about 15-20 minutes until cheese is just crisp…yummy!

I serve with sour cream, lettuce, tomato mix.



Guacamole
3 to 4 ripe avocado’s smashed

Finely dice 1 jalapeno

Dice 1 to 2 tomatos, remove seeds and liquid from tomato’s first. It adds water to the mixture you don’t need

Add a can of diced green chilies or however many you like I used roasted ones I got from NM.

½ finely diced pablano pepper

1 to 2 cups sour cream

3 green onions diced

1 lime, juiced

Salt to taste

Garlic powder to taste

1 Tbs fresh garlic



Mix all together and put a couple of the avocado pits in the final mixture to keep it from turning brown!

Shake vigorously to mix. Having it completely mixed is key.

I had a Bloody "maria" at a mexican restaurant last weekend. I will never, NEVER again have one. V8 sauce, "haberno" ?? pepers.. regular pepper, 4 shots of some kind of rum, and a salted lip.

Disgussssssssssssssssssssssssssting.

Spicy Chicken Dip

(2) 8 oz pkgs cream cheese​

(2) cans cream of chicken soup​

10-12 oz can chunk chicken breast​

20-25 jalapeno rings​


Mix all ingredients in 13x9 cake pan
Bake for 30 mins at 350
stir thoroughly then transfer to mini crock pot
serve with tortilla chips or Fritos Scoops​


Greg's Hamburger Dip

2 lbs ground beef (cooked and drained)​

2 jars Tostitos medium salsa​

1 large block Velveeta, cubed​

2 jars Tostitos Spicy bean and cheese dip​


Brown ground beef in 4 qt pan (or thereabouts)
drain meat and add salsa
stir in Velveeta
add bean and cheese dip
cook until Velveeta melts completely
transfer to crock pot
serve with tortilla chips or Fritos Scoops

Did I mention that I really like Fritos Scoops? lol​
