A quick google tells me albondigas are meatballs.
I'm going to have to write all of those things down and see if I can't find them at some Mexican Restaurant up here. I may try a certain place this weekend and see where it gets me.
In my old crock pot recipe thread there is a recipe for posole. Trust me, it is the bomb.
Barbacoa is a pit cooked pig, lamb, or goat. It is absolutely succulent.
Birria is a type of meat that is cooked almost in a stew. It is shredded and juicy and spicy. There's a place here that puts the birria on tacos and it is delightful.

I am pretty sure you know what menudo is. Many hate it. It is anything but bland though. People here who have hangovers, eat menudo.
Chicharrones are a meaty pork rind. Not like the ones in a potato chip bag either. Sometimes they are called cracklings by gringos. Very tasty.

Cocido is a type of stew. I looked it up and it is actually from Spain, but I've had it in many Mexican restaurants. I've had cocido with chicken, pork, boiled eggs, corn on the cob, cabbage, potatoes, onions, garlic, cilantro, and carrots. It isn't even close to bland. But in fairness it is also not Mexican. My bad on that.
So don't blast anyone in the sack for that one.
