Bye Week Primer

always like to put a bit of cheese in the centre of the burger when i make them. that chili looks good though
 
Nice thoughts and chili recipe. Hopefully we can get it done vs. Atlanta. Wade has to be feeling the hot seat, and that can't be nice for anyone. He needs to take control of this ship before it's too late.
 
Hos have you ever thought about the restaurant business?

I can't imagine being able to handle any hotter than that. That was quite the adventure the first batch. The second batch, I modified it slightly and left the habanero out and added some Rotel tomatoes. That was mighty tasty as well.

So what this tells me is that Wade Phillips is like Chan Gailey on one hand and Dave Campo on the other. :laugh2:

I reversed the order one time and did 5 habaneros and 1 jalapeno. It was lethal.

I gotta try the ghost peppers or red savinas in this. It has to be mind blowing hot.
 
Beans are in the crock pot on low. Tomorrow morning before Church I get to add some fire. Everything is all chopped up and defrosting the refrigerator. The coroner has been alerted.

I've got 10 ghost pepper plants outside. The dang late season rain really screwed them up right about the time they should have been putting on flowers. That long heat wave we had here stunted them early on too. I'm hoping to keep them alive and kicking until next spring.

A good friend who's a fire fighter here in San Antonio, or will be at least, grew some last year. He has implored me to pull them up by the roots and he's a guy who eats grill japs like pickles almost.

He said eating one straight is something like taking a shot of boiling gasoline, then swallowing a match. He forwarded me a video on You Tube of a guy who ate one in Hawaii and video taped it and said it doesn't remotely do it justice to how intense the pain is.

I still gotta know though.
 
my old roommate would use sliced habaneros as a pizza topping, and even he called the ghost pepper a little too hot, smelling it was a much as I needed.

We have faced the Falcons one time coming out of a bye week. 1995 under Barry Switzer. The game was won by the Cowboys 28-13 in Atlanta. After that game Deion Sanders announced that he "built this house." He was referencing the Georgia Dome.

I promised a surprise at the end of the post. This is the recipe for my very own crock pot chili.

I call it Hostile's Hotter than Hell chili. It goes great on a bye week as you watch the other games and don't have to worry about the knots your stomach may be in. Warning this stuff burns twice.

I hope some of you will try it.

This one is not for sissies.
  • 1 pound ground beef
  • 2 cups of pinto beans (less if you have a small crock pot)
  • 3 strips of bacon
  • 1 red onion
  • 1 habanero pepper
  • 5 jalapenos
  • 1 bell pepper
  • 5 tablespoons red chili powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon jalapeno powder
  • Course ground black pepper (pepper mill recommended)
2 cups of pinto beans in the crock pot add water to about halfway up the crock pot. Cut 3 strips of bacon into inch squares and add. Cook on low overnight.

Brown the ground beef. Sprinkle a lot of black ground pepper to season the beef. I usually grind the pepper mill for about 15 to 20 seconds. Drain the oil.

Add the ground beef to the cooked beans.

Finely dice all 5 jalapeno peppers, 1 habanero pepper, 1 bell pepper, and 1 red onion. Add to the mixture along with 5 tablespoons of red chili powder, 1 tablespoon of cayenne pepper, 1 tablespoon of jalapeno powder.

Cook for 4 hours stirring every 15 minutes.

Serve with grated cheese and Fritos and lots of ice water. Woowee.

Here's hoping some guys get healthy, the team works hard and stays focused. I need this bye week. The wins are worse than the losses around here. I finally don't have to worry about either. For one week anyway.

I'll probably want to use the restroom in peace afterwards.

Hey Hos, I've never heard of jalapeno powder?

Recipe sounds good, but as much as i love spicy food, it doesnt love me the older i get.

The truth hurts. And so does my chili. I can't wait to get home and indulge. It ought to be about lethal by now.
