Does anyone have any good casserole recipes? I'm on a casserole fix right now and am looking for new recipes.

Any kind, but really looking for bombdocious, flavor-blasted recipes.

I've been making a curry casserole and a marinated shredded beef and green chile casserole that is to die for, but I need some new ones.

What ya got, Zoners?! I know there's some cooks out there, and casseroles, when done properly, are amazing.

good topic. my nephew is living with me now and i try to good 4+ nights out of the week and something cool on weekends if i have time for a bonus. my usual fare is:

1) pressure cooked roast. meat or pork
2) pork loin in the oven
3) chili
4) mexican chicken soup
5) burgers of some form
6) beans and ham
7) salsa of my own making
8) fresh chicken fajita salads
9) fajitas

need to expand this out. i can do a lot i just never think of it or have the time. but a few of these would be pretty cool!

Green Mac-n-Cheese casserole. It's my own recipe of a couple of others combined and experimented with. I work for a hunting lodge 2 months out of the year as a guide/outfitter/cook and I make this every weekend of deer season for the hunters.

12 oz. elbow mac
8 oz. sour cream
16 oz. shredded cheddar
12 oz. small curd cottage cheese
1/4 cup grated Parmesan
1/2 cup milk
1/2 small onion chopped
3-6 large roasted green chilis chopped
Minced garlic
1 1/2 teaspoon salt
1 1/2 teaspoon pepper
1 teaspoon cumin
1 teaspoon cayenne
Butter

Saute the garlic, onion, and chilis until just soft in butter. Cook mac according to package and drain. While the mac is still hot add every other ingredient and mix well. Pour it into a 9x13 and bake it for 30 minutes. It's not on the Weight Watchers meal plan but it's an epic side dish especially with BBQ.

Crock Pot Cream Chipped Beef

3lbs ground beef
1 large onion chopped
6 tablespoons butter ( melted )
6 tablespoons flour
2 teaspoons salt
1 tablespoon black pepper
4 cups milk
5 cups shredded sharp cheddar cheese

1 brown beef and onion. drain
2 transfer beef and onion into large crock pot
3 mix in a bowl flour,salt, pepper, butter 3 cups shredded cheese
4 add mixture to crock pot and cook on low 4-6 hours
5 last hour of cooking add the final 2 cups shredded cheese

serve it over biscuits.
I usually use Texas Toast.
It is so freakin good!!!!!

Not a casserole but I made up a surprisingly good sauce the other day. I was deciding if I should marinate my steak or just go with the traditional salt and pepper. I found a Korean recipe called "kalbi." Basically, it's 1) sesame oil, 2) soy sauce, 3) white sugar, 4) black pepper, 5) diced green onions, 6) diced white onions, 7) diced garlic. I whipped it together, rubbed it all over the steak, let it sit in the fridge for a few hours, then cooked it. It was surprisingly good. The smell was amazing. I'd recommend it.

How long in the fridge, Joey, and what cut of steak? Yes, I'm weird and need to know these things :)
