Casseroles

Green Mac-n-Cheese casserole. It's my own recipe of a couple of others combined and experimented with. I work for a hunting lodge 2 months out of the year as a guide/outfitter/cook and I make this every weekend of deer season for the hunters.

12 oz. elbow mac
8 oz. sour cream
16 oz. shredded cheddar
12 oz. small curd cottage cheese
1/4 cup grated Parmesan
1/2 cup milk
1/2 small onion chopped
3-6 large roasted green chilis chopped
Minced garlic
1 1/2 teaspoon salt
1 1/2 teaspoon pepper
1 teaspoon cumin
1 teaspoon cayenne
Butter

Saute the garlic, onion, and chilis until just soft in butter. Cook mac according to package and drain. While the mac is still hot add every other ingredient and mix well. Pour it into a 9x13 and bake it for 30 minutes. It's not on the Weight Watchers meal plan but it's an epic side dish especially with BBQ.

i may or may not marinate fajita meat. depends on the flavor i'm after. finding the dry rub and more patience cooking pays off.
There is a butcher shop about a mile from my house, they sell the best sirloin fajitas I've ever had. I made some for some former cowboys when they came down for one of my football camps. They all agreed, George Teague even asked for the phone number so he could order some. They butterfly them and marinate with a homemade dry rub.
