Never thought of doing that. That's a great idea. But I don't get to eat a lot of fried foods (read none) at my house and Chinese chicken ain't fried chicken no matter what else you do to it. :O

Yea, my wife being an OR nurse tries to limit me also. However, my cholesterol is fine and I am not even close to being overweight so I sneak out twice a week for some lunch that is fried in some way :)

Best I ever had I can't get anymore because my Grandma made it and now she is cooking it in Heaven.

However the best fast food chicken is Popeye's.

The best I have had other than my grandma's is the Loveless cafe here in Nashville. If you ever get up here you have to try it.

Excuse my incompetence if I'm wrong but wouldn't u just pull out all the moisture if u fry it and be left with the same product?

Very good question. Brining works like osmosis, water (mixed with dissolved substances) flows from a lesser to a greater concentration. The liquid in the tissue cells are going to be more concentrated than any brining solution; so the brine is drawn into the meat. Once this process is done, frying or grilling will not effect the juicyness as long as you don't overcook the meat.

The opposite effect of rubbing salt on a meat will draw the liquid out because the outside is more concentrated than the inner tissue. This process is know as curing.

I used to really like KFC, but haven't eaten there double digit years. Today, I just avoid fried chicken due to how bad it is for you.

I lived in New Orleans around 1985 before Popeyes spread it's wings and became more of a national brand. I promise you, it was 100x better when it was only a local brand in LA and surrounding areas.

The crap they sell now isn't anywhere near as good as what they sold in New Orleans back in the 80s. I'm guessing there is someone here from that area and era that can vouch for my claim.

Popeyes. I wish they still had the strips in spicy. Cannot understand why they dont do spicy strips anymore. For fast food they have good mashed potatoes and gravy. Love that gravy.

KFC is really bad compared to what it used to be. Something is just lacking.

Unless they just removed the spicy strips recently, I had them a few weeks ago..
