Never understood the logic behind that.

Depends on how far you have to go. If it's 3rd and 10, I think statistics show that teams convert that about 10% of the time. So the longer you have to go, the less chance you have to get a first down and the more likely you are to turn the ball over if you try to go for it. That's why a lot of teams will run a draw on 3rd and 20.
