Have you ever tried Almond milk? It is even healthier than Soy milk and tastes great.

The body doesn't care where it gets it's nutrients from, as long as it can break down the food to to get to those nutrients. it doesn't matter how long it has been eating an edible.

All one has to do is look at your example of spinach and every other vegetable in reality. One needs gut flora to provide the enzymes to break them down soluble fiber precisely because the digestive system cannot break soluble fiber down on it's own. It is the same case with dairy, i.e. one needs the enzyme lactase to break down the lactose in milk.

Yep love almond milk too except most brands use dry-roasted almonds which adds to the flavor but reduces the Vitamin E content. Still get a decent amount of monounsaturated fats. Prefer soy milk because it generally has more protein, potassium and B-vitamins, plus less sodium.
