Since I've been home most of the day working on the CZ Mock Draft I decided to make my 5 alarm chili.

Oh my gosh the house smells great and I am sweating like a dog. Yes, I do have 2 ghost peppers in this batch.

My world is about to be on fire.

J/K, you must have an iron GI system. I love chili, but I can't handle the hotter-the-better variety without painful ramifications. My brother in law makes a great chili with chopped sirloin.
 
I used to have a great home made recipe but it's been lost somewhere so I usually use Carroll Shelby...but I like just plain chili with no beans

Hostile's Hotter than Hell Chili

  • 1 pound ground beef (I inted to use Chorizo some day soon, but haven't yet)
  • 2 cups of pinto beans (less if you have a small crock pot)
  • 3 strips of bacon
  • 1 red onion
  • 4 habañero peppers
  • 8 jalapeños
  • 2 ghost chilis chopped
  • 1 bell pepper
  • 5 tablespoons red chili powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon jalapeno powder
  • Course ground black pepper (pepper mill recommended)
2 cups of pinto beans in the crock pot add water to about halfway up the crock pot. Cut 3 strips of bacon into inch squares and add. Cook on low overnight.

Brown the ground beef. Sprinkle a lot of black ground pepper to season the beef. I usually grind the pepper mill for about 15 to 20 seconds. Drain the oil.

Add the ground beef to the cooked beans.

Finely dice the jalapeño peppers, habañero peppers, ghost chilis, bell pepper, and red onion. Add to the mixture along with 5 tablespoons of red chili powder, 1 tablespoon of cayenne pepper, 1 tablespoon of jalapeño powder.

Cook for 4 hours stirring every 15 minutes.

Serve with grated cheese and Fritos and lots of ice water. Woowee.

  • If you do that, I recommend that you still use ground beef as well. Make Chorizo an additional ingredient. You need the beef for consistency. The chorizo adds depth of flavor, but really isnt a beef substitute.

Looks as if you will have to eat all of it in a couple of days because it certainly won't freeze for later,will defrost the freezer.
 
I eat hot peppers three times a day --but dang Hos ,I,m not tough enough for that

Actually you don't want to drink water because that will spread the heat per say. You actually want to drink milk which coats the heat :D
 
Can't figure out what the other (not hot) ingredients are for. It's not like you could actually taste them.

Real Chile doesn't have beans... beans make it Chile Casserole...

for me, no beans. but onions, serrano peppers (i like heat but my god, let me taste something else!) and crushed tomatos.
 
I make my chili both ways. With and without beans. (kidney beans, not pinto beans)

It all depends on how I plan to eat it or if I have company that has a preference of with or without.
