Our defense does play like that, and that is the problem that many people complain about most of the time. Softer, deeper zones that allow for the play underneath but don't allow anything (usually) to get into the endzone once the offense gets in the red zone. The result is generally a field goal, or if they get close enough to the goal line our defense is normally strong enough to stuff them if they attempt to run it in.
The problem is that every now and again, we do get beat deep, but who doesn't? You don't think Buccaneers fans were pulling their hair out over the coverage skills of Ronde Barber and Aqib Talib on those pass plays to Austin, Crayton, and Williams? And don't tell me Barber and Talib are scrubs, because anyone here that knows one iota about football will laugh you off this website.
The problem with our defense is pressure situations. When the pressure is on, they tend to get caught out of position and have a hard time playing the 2-minute offense. If I were a coach, my recommendation for practice would be to simply run the 2-minute drill over and over to force our D to react in a pressure situation, but that's just my opinion. There's a reason why I'm a servicemember and not an NFL coach
