Someone PM'ed to ask my recipe for wings, I thought I would share my reply for those interested, or those who have suggestions to tweak/kick it up a notch.
(And for what it's worth, PBR is where it's at as far as beer goes. Quality/price ratio can't be beat!)
It's pretty simple actually, especially if you have a deep fryer.
Start with some wings from the grocery store or costco. If they are frozen you want to defrost them.
Ingredients:
vegetable/canola oil. whatever you ahve around that makes you happy.
Fresh/Frozen wings/drummettes. Not too big or they tend not to cook all the way through.
Frank's Redhot hot sauce (the key to great wings. if you can't find any try some other louisiana style hot sauce, but Frank's is highly recommended)
butter/margarine. Thickens the sauce to help it stick, and makes the sauce a little milder if you need it. One bottle is enough for 4-5 pounds of wings, and I like mine real saucy.
Cooking the Wings:
Heat the oil to 375.
Add a handful of wings, depending on how much room you have in your fryer. You want them to be fully covered by the oil.
Cook the wings for about 10 minutes until golden brown on the outside. Experiment a little to find how well done you like your wings. I like mine a little on the crispy side.
Remove the wings and toss them in a pan with some paper towels lining the bottom to soak up the grease.
Put this pan in the oven on low, just to keep the wings warm.
Throw another batch of wings in the fryer and repeat until all the wings are cooked.
Making the sauce:
Put some butter (1/4 to 1/2 stick depending on how spicy/mild you want the wings) into a bowl or saucepot and melt it on the stove/ in the microwave.
Add the Franks hotsauce to the butter. Mix well.
Put the wings/suace into a container with a lid and shake vigorously.
Put the sauced wings onto a serving platter and server with ranch or blue cheese dressing.
Dig in!
