Sean Lee was drafted in the 2nd round in 2010, and has been in the NFL for 8 seasons. In that time, he's started only 72 (4-1/2 years) of a possible 128 games.
Compare to Travis Frederick, who entered the league in 2013 - three years after Lee, and has started 80 games. Accordiing to Pro-Football-Reference, Frederick has a career AV of 51, which Lee has a career AV of 50.
Zack Martin has been in the league 4 years less than Lee, and has started 64 games, with a career AV of 48.
Lee is awesome when he's on the field. But he compares to a top level 4-5 year starter, not a guy who's been in the league for 8 seasons. This gets back to Availability being a key part of Ability. Ability on the bench, or in the trainer's room doesn't help the team. The Cowboys need more reliability at the linebacker position.
Put in another perspective, 4th round journeyman LB Anthony Hitchens has a career AV of 24 that is almost exactly 1/2 of Lee's career AV of 50. And he's been in the league 1/2 the time that Lee has been in the league. Hitchens, who no one would suggest is equal to Lee in talent, has approximately equaled Lee's career AV over the same 4 year time span - simply by remaining healthy for the majority of the time.
