So whats for dinner?

I'll be making tortillas and frying tortilla chips from said tortillas. Will be grilling chicken too. Remaining tortillas go to quesadillas, and the chips are for the queso that's going in the crock pot. I also think I can throw some fresh pico de gallo together, not sure, just thought of it now.

Oh man! That sounds good. Nothing like homemade...

Chips and dip and soda. But don't feel bad for me. I've got a comfy sofa, a wife who won't fuss during the game and a place to prop up my feet.

Just finished some awesome Baby Back Ribs.

They were so good (and easy to make), I figured I'd share the recipe for those interested. They were bursting with flavor and the meat was so tender it was literally falling off the bone.

1-2 large racks of baby back ribs
KC Masterpiece BBQ Rub
Diet Coke
Your Favorite BBQ Sauce

Cut the ribs into sections so that they will fit into a crock pot.

Rub the ribs liberally with the KC Masterpiece BBQ Rub until both sides of the ribs are covered, and the spices are worked into the meat.

Place the spiced ribs in the crock pot insert and stick in the refrigerator for at least an hour, and prefeably overnight.

Wake up next morning (very important).

Pour enough diet coke into the crock pot over the ribs to fill the pot up about half way.

Turn the crock pot on low and cook the ribs for about 8 hours, changing the position of the rib sections every hour or so, and adding more diet coke if necessary.

Place the ribs on a medium or medium-low grill and baste with your favorite BBQ sauce. Cook on grill 10 minutes each side, re-basting about half way through each time.

Serve with your favorite pitcher of ice cold beer.

Awesome, and so easy even a knucklehead can pull it off.

Enjoy!

Lasagna, meatballs and garlic bread.
Sauce made from home grown Garden tomato's today.

I've already thrown some burgers on the grill and baked some fries, drank some lemonade, I'm set folks. I guess I wish I had a slice of pecan pie. :)

Diet Coke? I was following along, up until that. What does Diet Coke do?

I use diet coke (and sugar free BBQ sauce) to keep the recipe low carb.

The reason that coke is used to braise the ribs (and thus tenderize the meat) is to add a bit of sweetness to the ribs. You could use beer, beef broth, or even water, but trust me, the coke is really good.

Oh man, that sounds good. One thing about living in NC (NY transplant)
Not a good Italian restaurant to be found.

I made a smoked brisket and beans. A nice Texas meal in honor of my Cowboys here in Dolphin land.

I can't cook so, I just made nachos in the microwave.

There is something to be said for the old country and fine homemade meals.

We're having double meat cheeseburgers, chicken strips, steak fingers, fries and whatever else my wife picks up from Dairy Queen. I was too busy watching football today to cook on the grill or in the kitchen.

Fresh cut steak fajitas with sauteed onions and Mexican cheese.
