Hot honey? That sounds amazing!

I like original Tabasco sauce for most things, like breakfast burritos and such, but last year, when I went out to Ohio, I stopped in at a Mexican restaurant and they had this awesome habanero sauce, the name of which escapes me. I'll try to remember to check when I get home, but it's got great flavor, as well as a lot of heat. So much heat, that one little bittboI got them to sell me has lasted this long, and probably a lot longer.

My two favorite hot sauces are Frank's original buffalo and Cholula's Chipotle hot sauce. (the chipotle is perfect to moisten up a turkey sandwich instead of mayo though chipotle mayo is awesome too!) Many of the other big names I don't care for so much because they are 95% vinegar and well. Not a huge fan of strong vinegar. (Tabasco, Sriracha, etc)

Ok, let's heat it up. It's summer down here in Texas and so hot the other day I saw a dog chasing a cat and they were both laying down.

But there's a kind a heat I dig, hot sauces, salsas, peppers, etc.

So what's your favorite to heat things up? Store bought or homemade, what do you like and what do you like it on? If you've got some homemade hotness, share the recipe.

My store bought LA is Crystal, the original hot sauce for Buffalo Wings at the Anchor Bar in Buffalo.

But I've just discovered something new just recently that knocked my socks off, Weak Knees Gochujang Sriracha, best sriracha I've had but my favorite new thing, and this is dynamite on fried chicken, is Mike's Hot Honey. I keep finding ways to apply this sweet heat.
This is good stuff

Sure wish I could handle hot sauces like I used to. Now days, the medium at Hooters gets my stomach rumbling :(
Hooters has a medium? That's my kinda séance, the ghosts in orange hot pants. Me haunt you long time.

Know my favorite thing to put hot sauce on? Oh yeah, you do? Well what do you think it is then, Mr. damned smarty pants know-it-all, Ha, wrong, popcorn.

When I pop some popcorn, as opposed to tarts as I am too mature to pop tarts anymore, I use different hot sauces and here's the magic to not let it overpower it. Put it in a large bowl, preferable stainless because that's lighter, and according to the heat level, fewer drops for he hottest, sprinkle it on while shaking and tossing the popcorn. This is also a great way to sample different sauces because the flavor really comes through.

The other thing you can do for a really simple but flavorful dish is combine either canola oil, or any unflavored oil with your preferred hot sauce, or butter with your hot sauce and toss your pasta in it. Man, a little goes a long way to get the flavor.

Want a great summertime salsa for grilled fish, shrimp, scallops or pork? OK buttface, but I am giving it to you anyway.

Grill fresh pineapple slices, red onion slices basting them with lime juice, limes halves and either jalapenos or serranos. Put the peppers in a bag to steam so you can peel the charred skin off. Chop everything including a bunch of cilantro, squeeze the juice of the grilled limes and let that marinate in the frig for a few hours. Makes incredible tacos. I've done this with different fruit like mangos and peaches and it's really good too but that pineapple is the best but it needs to be fresh, not canned.

And those of you that make your own margaritas, add a generous splash of pickled jalapeno juice to your marg, I can't drink them without it anymore. I also add dill pickle juice and pickled jalapenos juice my Bloody Mary mix and it has achieved legendary status, at least in my own mind.
