I think the Eagles game showed Cooper could, potentially, open up the offense. It's reasonable to think that the fact that teams actually have to care about a Cowboys skill player on passing plays now that will have SOME trickle-down effect.
The real question is, when defenses learn to better adapt to the fact that the Cowboys have a receiver that at least requires SOME EFFORT to stop, what will the Cowboys coaches do in response?
Their history on that front is uhhhhhhh not great. It's not 1992 and Cooper is not an Irvin tier nigh-unstoppable force.
