Some additional things I like about 2 TE sets:

1. Even if the TE does not block, it causes the outside pass-rusher to take a wider path and gives the OT a extra split-second to get into position. It makes it much more difficult for the outside rusher to jump to the inside off the snap which again, is beneficial to the OT.

2. You can line up TEs in the position normally occupied by a FB but you can't easily line up a FB in the position normally occupied by a TE.

Yep, and let me add another.

Since you have a second tight end in so often, you can help Doug Free when needed without giving away that you're about to pass.

And you are backing my point that the personnel group on the field makes little difference if they don't do what they are suppose to.
