Keep him, start him, love him. It's still Romo's team. Dak will prosper with a year or two under Romo's tutelage and the future with Dak will be even brighter.

Jerry told Romo the QB competition is during training camp so you can be absolutely certain if Romo hasn't been traded yet, he will be ready to compete at that time for the job that should already be rightfully his. No one is going to meet Jerry's asking price for Romo until after the season has started. He's going to be gone before training camp. They won't give him the starter's job back, and he won't accept being a backup.
Not when you have a backup like Dak. Look at what happened in 2016. In fact look at what happened in the last 3 years. Romo is 15 and 4 in his last 19 starts.Disposing of aging quarterbacks with a long history of major injuries is not a big gamble, keeping them on the roster expecting them to start 16 games for you is the big gamble.
