If you are on the road, you might check out this directory of food co-ops -- Co-ops are usually a very good source for organic, locally grown foods (often from the same farmers who work the markets). As a plus, most have a hell of a beer selection as well.

...African cuisine. They focus alot on legumes and carbohydrates. Some very interesting stews are made in ceramic pots with vegetarian ingredients. Lot's of sweet spices like Saffron, Cardamon and the like.

If you are looking for Asian give Burmese and Laotian food a crack. Lot's of Lemongrass flavoured recipes. Lot's of spice. Try papaya salad with sticky rice.

If noodles are what turns you on look no further than Vietnamese with it's traditional PHO (pronounced "phur").

With Chinese food there are hosts on local delicacies based on noodles and rice as the base. The further you go north in recipes the more wheat based the carbohydrate with very intense spices and meat flavours. The further south and you see a stronger prevalence of rice based carbs with more fish flavours since they are closer to the ocean.

If you decide to eat meat again try meat based protein that isn't so densely packed with fibrous string. Pork is hands down the worst. It will sit for days in your belly if you stuff yourself. The best is goat or lamb meat with the lowest fibre content per pound of flesh.

Vegetarian or meat eating all food is good when it is prepared from scratch. It's when it is processed that I usually have a problem with it.

I like Stir Fry, you can do it sans meat and its still soo good :) i love all the foods vegs/meats
