I've always thought a unique idea would be a rotating "ethnic" restaurant.

Each night of the week would have a totally different menu. Find some little old lady from that background who'd be willing to work one day a week overseeing the prep and share her recipes.

Imagine soul food Tuesdays, pea soup and pancakes or other Nordic dishes on Thursdays, wedding soup and homemade gnocchi on Friday nights...Sundays could be potluck of leftovers...few things in life are better than rewarmed lasagna.

Yes it is dog...and I would not be shocked if I ate it without knowing it.

And you would have to pay me big bucks to eat Kimchi.

I don't care for it at all, but add the factor of being in a room full of people who ate kimchi on a regular basis on a hot day and the smell would overwhelm you.

Some of their brown t-shirts actually would get orange stains on them from their sweat...not lying.
I agree it is pungent.

I ate dog in Mexico at a very poor family's home that invited me to dinner. Did not know it was dog until later.

I still get ookie about that.

I actually think this would be kind of cool, but it might be hard to keep a regular clientele.

I don't think find a regular clientele would be the issue. Food cost/storage would be the problem.

If you had a killer homestyle Italian meal one night, don't you think that you'd at least try one of the other nights? Suppose you discover you hate haluski. I'd still be able to count on you as a customer for the Italian night. Suppose you loved it. You'd be stressing over what night of the week you were eating at the restaurant. A great problem for the restaurant to have.

I'd think that the mobility of our society would help also. I'd bet there's enough ex-Pittsburghers in any Southwest urban area to cram Polish night for a taste of home.

It would have to be served family style to remind people of Sunday dinner at grandma's when they were growing up.

If you want to try good korean food (not dog) you need to order

Kal-Bi (Korean style short ribs)
Bul-Go-Gi (marinated beef)

Vietnamese food is also good, though I do not know the name of my favorite dish (it is a noodle dish w/ beef and a very tasty sauce mixed into it)

German - JaegerShnitzel

Italian - Sphagetti (hey, it's my favorite)

English - Fish n Chips

Indian - Agree with the Chicken Curry

Thai - Beef Pad Thai Extra Spicy

Chinese - General Tso's Chicken (when made properly)

Also, I love Cajun food (ever been to a crawfish broil? mmmmmm......)
