Okay, I definitely think roasting the peppers adds heat. Then I add a diced onion, a clove of diced garlic, and 6 to 8 diced red tomatoes depending upon your favorite. I like Roma tomatoes personally so I use 8. Squeeze in the juice from 2 limes, add a teaspoon of salt, some ground black pepper, and if you like cilantro sprinkle a little in it. Stir it all together and let it chill.
It is good with the peppers still warm, but better once chilled.

I've gotten used to spiciness...my parents are Indian, so my mom puts so much pepper in everything. Most of the time, when I cried, it was because of the epic spiciness of my mom's curries.
But, I guess I'm better for it. I can eat really great things despite the heat, and I've even come to enjoy the heat.
