Which really makes it Tex-Mex and not really "Mexican" at all.

And...Rack must be incorrrect because..."The Mexican term for grilled skirt steak is arracheras"...not fajita.

So go have a fajita; beef, chicken, or sea food and and let it go and be happy about it.

Regardless, they sure are tasty. :D

Actually Chicken Fajitas is not correct either, but it has caught on for some reason.

Going by the exact wording, Chicken Fajita means Chicken Skirt Steak.

Some dumb white guy that probably thinks Fajitas is an entree probably thought a "Fajita" was skirt steak sliced up so he figured doing the same thing to a chicken made them "Chicken Fajitas".

It's not correct.

Go to a restaurant here or in mexico and ask just for Fajitas and the waiter will stand there looking at you waiting for you to tell him what you want with your Fajitas (aka Skirt Steak) cuz - as I said - Fajitas is not an entree, it's a meat.
I've been to probably a couple dozen or so different Mexican restaurants and every time I order I just say "fajitas" and they bring out more than just the meat.

I think everyone else on the planet is wrong on this issue but you.

Actually, the quote you posted says "The only true fajitas, however, are made from skirt steak." Thus, fajitas is the product which is comprised of skirt steak. Meaning, it's not just skirt steak, but skirt steak combined with something else. Hence, it's a dish.

Rack was just trying to be a smart*** and it backfired on him. ;)

Well, I like Mexican and Tex-Mex. I also realize there's a difference in how each item is made, but I still order the same no matter where I go.

I tend to like flautas (grilled chicken), burritos (grilled chicken), enchiladas (spinach and/or grilled chicken), chimichanga (grilled chicken).

I had seafood enchilada once, I didn't like the sauce. Besides it's hard for me to wrap my head around seafood in mexican food.

I always get rice and beans (refried or black), mix them up and pour salsa on them.

I've lived 40 miles from Mexico for the past 20 years, but grew up in a different part of New Mexico. No matter where I've gone, my favorite has always been red enchiladas with beef.

But I like a lot of other stuff:

green chile with beef

chile rellenos with green chile

green chile chicken enchiladas

green chile stew

posole

chimichangas (with shredded beef, like bbgun said)

Oh, and I can vouch for Hostile's love of chile colorado. :)

That is hilarious ...... because that was the first thing I thought of.

Same here. :p:

When it comes to food, I like the ol' chimichanga!

Regarding the great fajita debate... it may originally have a very specific and narrow definition, but it obviously has taken on a much broader meaning in common parlance.

Not down south it hasn't.

You go to the supermarket and buy "Fajitas" and you'll be getting raw skirt steak, not an entree.

Maybe the yuppies up north decided to give it their own definition, but either way it's wrong.

Oh but Theo has been to like 10 different mexican restaurants. I've only grown up on the stuff, I think I know a little more about it then he does.

Next time I go to the grocery store I'll take a pic of where it says "Fajitas" and of what you actually get when you buy them.

I don't doubt you. All I'm saying is that if you go to a Mexican restaurant in pretty much anyplace else in the United States, including in much of Texas, you can go to a restaurant and order a dish called "fajitas" and get either steak, chicken, shrimp, pork, and even just veggies. For better or worse, "fajita" mostly has just come to mean: "the waiter brings your food out on a sizzling platter. :D

carne adovada........marinated pork.
best i ever had was at a place called The Comet Drive In, Santa Rosa, New Mexico.
and i agree with Rack....i remember when you ordered fajitas nobody asked
if you wanted beef or chicken.....everybody knew it was beef.
now they have expanded it to mean all the other stuff.

ive lived in new mexico and texas and i gotta say i like the mexican food in both places but i really liked the mexcian food in new mexico more.
