I love a few simple tacos with pollo tinga (that's chicken stewed in a chipotle sauce), rice and beans.

A friend's mom used to make a dish that was stewed meat - beef usually, there'd be tripe and other stuff in it, cooked forever so the stuff was just falling apart. Anyone know what that is called? I've had similar dishes in cuban places (Ropa Vieja) but it kinda lacked the umph.

In honor of this thread, I went to a place called Gringos tonight and had a grilled chicken chimichanga, refried rice, and beans. First time I'd ever had it there. That and their southwest egg rolls were great.

Topped off with a couple margaritas made for a great meal...

You quoted someone who mentioned some guy who did a study. The guy who did the study isn't the one who referred to it as a "Dish".

When I want to know the difference between hot pink or some other kind of pink, then you'll probably get it right.

Here's a recipe you guys/gals will like. I am not the kind of cook who measures precisely, more of a dash of this and a pinch of that kinda girl, so don't hold me to exactness, just trust me. :)

This recipe will feed four and is good served with chips, salsa, spanish rice and/or refried beans.

4 Nice size chicken breasts
1 bunch of cilantro
one onion
fresh or minced garlic
2 serrano peppers, more if you like it hot
1 lb of monterey jack cheese
2 nice tomatoes, ripe
olive oil

Use a meat cleaver to beat the chicken breast flat, don't go crazy, just flatten them some
Brown the chicken breast in a tablespoon of olive oil in a frying pan, don't cook, just brown
Chop the onion and cilantro, and garlic if it is fresh
Place the chopped onion, cilantro and garlic in the pan
cook on low till cilantro and onion are glazed
spread half of this mixture into the bottom of a 13 x 9 baking dish
place the chicken breast on top of the mixture
cover the breast with sliced tomatoes
cover this with grated or sliced monterey jack cheese
spread the rest of your cilantro mix over this
sprinkle shredded cheese on top
Bake at 350 degrees for 45 min-an hour

Odd, I know. Southwest chicken eggrolls are an appetizer. Usually served at more of the american food type restaurants. First time I'd ever had it a mexican restaurant. They were REALLY good. Better than what I've had at some other places.

Nashville (on Nolensville Rd) has some great Mexican restaurant. But I do not like Las Palmas (very bland food).

we finally got a real cold front today here in bay city, texas...

i'm making some homemade carne guisada as i type this.

with spanish rice and guacamole and refried beans..
