Found the recipe and I will be eating a lot of this pie later. :D


1 Cup Graham Cracker Crumbs (I use regular graham crackers, not the kind with cinnamon on it)

1/4 cup packed brown sugar

1/2 teaspoon ground cinnamon

1/4 cup butter, softened

1/2 cup white sugar

5 tablespoons all-purpose flour

1 pinch salt

2 cups milk

2 egg yolks, beaten

1 teaspoon vanilla extract


Directions:

1. To make crust: In a medium bown, combine graham cracker crumbs, brown sugar, and cinnamon. Mix well, then stir in softened butter or margarine. Mix until all ingredients are thoroughly combined.

2. Generously grease an 8 inch pie pan. Press graham cracker mixture evenly into pan. Chill until ready to use.

3. To make filling: In a heavy saucepan, mix together surar, flour, and salt. Gradually add milk, stirring well. Add egg yolks and whisk until mixture is smooth. Cook over medium heat, stirring constantly, until mixture thickens. Stir in vanilla extract. Put seran wrap on top to prevent skin from forming. Allow to cool.

4. Poor cooled filling into crust and chill before serving.



Voila.

They make an olive paste and cheese pie here that is pretty cool.

As far as fruit pie fillings go, I sometimes make a cake-pie hybrid. It's easy and good.

I get an oblong deep single layer cake pan and spray it with nonstick product (e.g., Pam). Then I'll open a couple of cans of pie filling (usually one cherry and one blueberry) and distribute the filling in the bottom of the pan (spread it out evenly). Then I prepare a box of cake mix (usually a yellow cake mix) as directed and pour the mix on top of the pie filling. ... I don't mix the filling with the cake mix ... the cake mix is poured top. I then bake the cake according to directions ... although the cake often needs an extra 5 minutes or so (check with a toothpick).

The above is good without frosting, but you can top it with frosting too.

I am so trying this! :D
