Old school here but Randy Hughes of dirty dozen draft and Brock Marion of the 90s teams. Always thought both would have been superstars in Dallas. Both showed flashes but Hughes retired because of injuries and Brock made his mark somewhere else.

In the spirit I think the OP intended...
Kevin Burnett - smart, tough and had heart. No one really sang his praises, but he was a solid football player.

But the real answer...
Emmitt - trust me, I liked him more than anyone else.

Wow. I thought I was the only one in Dallas who was not a huge fan. But yeah, man is he a hell of a football player.
Yes, my absolute favorite running back in the modern NFL appears to be an immature bone head as a person. I really, really hope he grows up soon.

MD26 the ringleader of Thurman's Thieves..

Danny White coined the name in 1985 .

Ron Fellows
Dennis Thurman
Michael Downs
Everson Walls

Was fun to watch Everson and Michael patrol the secondary with their ball hawk skills. Michael was a very smart player and a very solid tackler....Both undrafted free agents.
Downs was so under rated. Great Cowboy and safety. One of my favourites.

Bill Bates, everyone said he was too slow, but he was always the first one to make a hit on special teams
A most Excellent call!
In fact, it excel's the excellent chart and is in the excelente placement (cuz' I was gonna put him in my Post.)
I kinda liked Devin street simply because I kinda felt like he was always planning on breaking out with the big play to establish himself with the team ,what I called the 'black cloud of bad luck' hovering over him 75% of the time he was on the field, others considered it jittery ineptitude and pushed him on down the river ( I need to google him to see where's he's landed up)
Although I was glad to see #21 Sanders wearing the star, his style of showboating kinda irked me, had to be the twinkle toes shuffle he'd employ when he'd cross that goal line, #44 ' Moose'
That's the t.d. kinda guy that impresses, he'd flip that ball back to the referee like he done it every day, like flushing the commode in the morning,,, no biggie.

Antonio Bryant...wow..there's a name for ya. Just knew Dallas hit on that player and then there was the whole throwing the shoulder pads thing at papa Bill. Wrote his own dismissal note that day just about.

Aikman and Michael Irvin. My family had stories of running into them on various occasions back in the nineties, and had good things to say about their personalities and demeanors.

Dez.

Recently, Dak and Jaylon. I get good vibes from the DB rookies now, too.

Dang. I forgot to mention Hitchens. I know most consider him an expendable jag (and he might be) but last year I noticed some dog in him. He was playing like he hated every player on the other team whenever I noticed him near the ball

Roger Staubach on and off the field and nobody is even close but Emmit Smith, Cliff Harris and Charlie Waters are very honorable people, TooTall Jones as well, just good people. Can't forget the Moose!

I loved Michael Irvin on the field, Charles Haley and Deon Sanders.

We've been blessed with too many to list.

Wow. You named a lot of my favorites of all-time.

Currently I love me some Keith Smith. I love FB that hit hard and knock LB butts out of the hole.

Jimmie Jones was my far and away favorite players as a kid.
Jimmie Jones was a great backup/rotational player.

Nate said he was a guy that thought we was the greatest and told everybody about it. Nate was basically saying that he needed to shutup and accept that he was a backup and would only be a starter if he earned it. I thought he had a lot of talent but apparently he was not the high motor, over-acheiving everybody wants him to date their daughter/sister type like Lee, Wittten, Bill Bates, etc..

He should have started over Casillas and Maryland. He was the better player.
