I use foil instead of parchment because it's easier to pour off the drippings for a myriad of other uses like a Bacontini, Baconarita, Bacon Russian and Bacon Mary and it's an easier clean up. I also have experimented and 400 gets crispier bacon but in ether case, it needs to be flipped and the pan should be turned 180 at about 12 minutes. You can put it on a rack over a sheet pan and not have to flip it and it doesn't cook in it's own fat, if you want a "healthier" bacon. Uncured is as healthy as I'll get and anyone making bacon out of turkey should be ashamed. Anyone making it out of tofu should be shot.

Homemade buttermilk pancakes for kiddies for breakfast. And a pound of the greasy good stuff for my bad self! BACON!
