Yep....same. We never refrigerated it growing up and not now in my adult life.
 
We have an air tight cake tray. We put any baked goods we make in it.

We always make plain CB. If we want it sweet, just sop it in honey butter mixture. :)

Sweet CB would suck in pinto beans. (IMO anyhow)

Plain cornbread is the only cornbread.

I hate when these "fancy soul food" restaurants have corn kernels in the bread.

Good cornmeal won't have any full kernels left in it even if you aren't buying the Jiffy cornmeal.

To make it sweeter you can use honey butter instead of regular butter when mixing it, too. Add like a tbsp. Or just use honey butter as a spread.

I prefer classic cornbread taste, however.

I agree that I don't want corn kernels in my CB but I DO like mine with just a little hint of sweetness.

Jiffy and there's no contest.

My mom can make hot water cornbread, but for the most part, its Jiffy.
 
The only CB I ever ate that was made with other stuff in it that I really liked was a Mexican CB. I admit, it was pretty tasty.
 
My Mom used to make fried cornbread when I was young. It was about the size of a pancake and thin like that.

To this day the best cornbread I've ever had. I've tried several times to do it like she did and never had any luck.

Incidentally, get some Martha White's mix and add an egg. It becomes Louisiana cornbread... also add a can of chiles or jalapenos...

GOOD stuff...

Hot Water cb is good, too... but it has to be done right...

The bottom one is exactly what my Mom's fried cornbread looked like.
 
We usually bake cornbread but we fry it during the summer to keep from heating up the house with the oven.

I like to put a little white flour and a hint of sugar in it but my wife's folks are purists and insist on none of either. For the oil we use bacon drippings or lard or butter because they are all healthier than partially hydrogenated vegetable oil from GMO plants. No trans-fats in our diet.

Isn't lard pure trans-fat? Unless they came out with a new trans-fat free lard.
 
Fried cornbread is better known as Hush Puppies around these parts...

The old legend is that Southerners would fry up batter and throw it to the dogs to keep them from crying for fried catfish saying "Here... hush puppy"...
