Yep....same. We never refrigerated it growing up and not now in my adult life.

Good cornmeal won't have any full kernels left in it even if you aren't buying the Jiffy cornmeal.
To make it sweeter you can use honey butter instead of regular butter when mixing it, too. Add like a tbsp. Or just use honey butter as a spread.
I prefer classic cornbread taste, however.

I like to put a little white flour and a hint of sugar in it but my wife's folks are purists and insist on none of either. For the oil we use bacon drippings or lard or butter because they are all healthier than partially hydrogenated vegetable oil from GMO plants. No trans-fats in our diet.
