Anecdotal, I know, but it seems that a substitute center usually results in at least one fumbled snap exchange, first game in.

Is Brock Hoffman still the backup center?

Yes. He'll be called up for one more game and then it will be the other guy we picked up. If either has to actually replace Biadasz, it could get ugly. Hopefully, T.J. Bass has been working hard at learning center. I believe Ben Jones is still out there as a free agent.
