It doesn't say "and" it says "or", music doesn't need all three. Music is using sound to convey or express ideas or emotions and with any kind of art beauty is in the eye of the beholder. You can go back to guys like Ornette Coleman in the 50's abd 60's that kinda turned Jazz on it's head and abandoned harmonies and rhythm to embrace the core improvisational nature of jazz to let the artist play whatever notes he wanted to capture the feelings in that moment.
Not all music appeals to all people, but the beauty of music is you can find some kind of music that appeals and speaks to you.
People can like different types of noise. It still doesn't mean it's music.
Plus, where are you getting this information that jazz was created by abandoning harmonies and rhythm? Do you even know the history of jazz music? It's most important foundational element is harmony:

Didn't you ever watch the movie, Crossroads, starring Ralph Macchio, Joe Seneca, Jami Gertz and Steve Vai? Maybe you should. It's a great movie expressing the roots of jazz music and how it takes rhythm and "feel" to truly be able to express through jazz music what you're feeling, an "extension" of your human voice.
