I think it will definately be broken at some point. Someone will come along eventually that is able to stay healthy and have a long productive career. Once someone gets close they will hang on for an extra year or two until they get the record just like Emmitt went to Arizona just to pad his numbers and make the record harder to get.
While Emmitt's record may seem unlikely to ever be broken, all it really will take is for a very good RB that stays healthy and has a long career to come along. Then that RB will have to want the record and be willing to move from team to team at the end of his career. That will eventually happen.
