Same princple as cooking onions and bell peppers on the same grill/griddle you'd cook your fajita meat in.

Exactly what cowpoke said. The only difference is that you cook them slow enough and not too fast...if you do it fast then you just have a giant onionsteak instead of a slow-cooked slice of deliciousness with a hint of red onion sweet and tangyness.
