Tri-tip has replaced skirt or flank for me as my meat-of-choice for fajitas.

Costco has some that are pre-marinated, that are really good.

Agreed. Costco is amazing. They have a fantastic food section and some of the best semi-prepared food items of any club style store I know of.

Love the place.

My wife refuses to shop at Costco. She says that it forces her to buy large quantities. If we have large quantities of food in the house, we will have large quantities of fat shortly there after. :laugh2:

A lot of truth to that. It is real easy to get a bad cut of Prime Rib, but if you get a good one it is really good.

The best prime rib IMO blows away the best of any other steak listed in this thread.

But yeah, the prime rib has to be cooked (baked) properly.

That's not so in my experience. Way more items can be purchased there in "single family" quantities than are available at Sam's, and they have a much more diversified/mainstream selection.

I had some tri-tips earlier this week. I cooked them sitting on top of red onion circles...incredible.

I would imagine the onion caramelizes, imparts some of that sugary-onion flavor into the meat, and vice versa. Seems they'd make a pretty tasty accompaniment too.

Same princple as cooking onions and bell peppers on the same grill/griddle you'd cook your fajita meat in.
