I've heard their Head Cheese is to die for......

My uncle was a butcher and he used to make his own "hog head cheese". My Dad made some one time too. He used to love the stuff!! I never liked it!! The gelatinous consistency was enough to say "uhhh noooo". LOL

When I was a kid I worked at a deli and the 2 nastiest things I'd slice was Head Cheese and cow tongue......the tongue was a favorite of people of the Jewish faith.
