I'm going to put some New York strip on the grill, whip up some mac and cheese with bacon and steam some broccoli. Needless to say I'll be throwing back a few glasses of bourbon.

We have a gadget that slices zucchini to look like spaghetti....pretty good....I was surprised
Easy way for vegetable pasta is spaghetti squash. Cut in half. Bake in oven for 45 minutes. Let cool and remove center pits and scrape out the squash with large fork and it assumes spaghetti form

Have you considered Fettuccine as a compromise between the thin sphegetti and the larger mass pastas? May satisfy everyone

BTW, if you're not making pasta from scratch I suggest you start. Eggs, semolina, bread flour and olive oil. Get a used pasta maker off ebay for about 25 bucks and good to go........and the kids will have a BLAST helping you roll it out on the machine

I love all shapes of pasta, they all have their place. My kids wouldn't go for fettuccine because it's to long, sadly.
Back in the 90s I used to make my own pasta. I had one of those machines where you dropped all the ingredients in and it spit out whatever you wanted. I liked it but some didn't. So when the girl I was dating and I broke up, I left it with her because she didn't like it. Lol.
I like that simpler version on ebay you posted. I may start getting back into it.
Everyone I know think I missed my calling and I should have been a chef. Of course, I'm nowhere near chef caliper but I can make a fine meal.

Make a circle of the semolina and flour on a surface.
Pour the beaten eggs in the center of the well and mix it together SLOWLY
Kneed lightly and roll Into a ball and wrap in saran wrap....and let sit for a bit

After that it's gets fun. Roll small amounts into the desired thickness and then use the cutter head to transform it to the type you want.....the kids will love the process.

As you already know, unlike dry pasta, the longer you boil it the harder it will get., so 2-3 minutes tops.

Get a hand ravioli cutter and then you can start using things like shredded veal shank, herbs, lobster and a whatever else you like and it will be a game changer.......you can cook them up directly in whatever sauce you like. I like a red pepper cream sauce to go with something like that.

Red beans “n” rice chased by a cold Shiner.
I live in south jersey. I finally found a place that sells shiner bock near me.
It's not bad.
It reminds me of Yuengling Lager without the scabby ownership.
If you're ever up in PA or NJ and you're looking for something similar to shiner bock, Yuengling Lager is your beer.
