Years ago I worked for a pork processing facility. They had a company store where employees could buy meat at a discount. I used to get the big packages of Italian rope sausage for 99 cents. Between that, pork tenderloins, ham and ribs I bought meat there all the time for super cheap.
That was the best part of that job. Lol

Not sure what city you're in, but if it's San Antonio, try Texas Star Inn. They have the best cornmeal crispy fried catfish I've ever had. I highlighted crispy because most places I've been to don't fry it enough. It might be crispy out of the fryer, but the steam will soften it a bit. At STI the fried catfish is always crispy.I still go . Just changing things up today. And fried catfish sounds great.
Funny enough, I bought a smoke tube to cold smoke salmon....and realized it was the perfect addition to the pellet smoker...to get the added smoke flavor. That was always my biggest complaint about pellets...they didn't provide enough smoke and the ring was never as nice. It has become a game changer for me.I have slowly been converting to pellet from a stick burner over the last few years. I don’t consider it cheating anymore, too much work not to use a pellet grill these days. I put an extra smoke tube in there for the first half of the cook…..no complaints.
