Good luck on smoking a wild turkey period. Wild turkey is a whole different bird than cooking a Butterball. They're lean and sinewy! I cut the legs off and throw them away. I've tried slow cooking, pressure cooking, and even jerking wild turkey leg meat and it's just not edible. About all I do with a wild turkey anymore is breast them out, tenderize them, and deep fry them. Occasionally I'll butterfly the breasts and stuff them. Wild turkey in (West Texas at least) have a gamey flavor and little to no fat.

Maybe, but 3 shots of it and a coke go great over ice.

( guess I shouldn't have unlocked that casing-liner door today, as it's reverting/dragging me back ,,,even found a canvas 11 pouch 'mills bomb' chest vest manufactured in 1918 that I'd completely forgotten about.)

I'm posting early, cause this one will need preparation. I am taking a wild turkey out of the freezer tonight, thawing it for about 30 hours, marinating it for another 36 hours then sticking it's head far up it's butt and smoking it for a day. I'll let it sit and cool, slice it up and then make Turkey Ala Goodell samiches on gameday! Salud!
Head far up butt and getting smoked...hmmmmm...sounds like our defense of late!?! ;)

Just making sure. Some swear by dry brine. Some by various liquid brines. But by far the best turkey I have ever had was following an applecider brine.
Right you are...you ever tried to cook a brined turkey butterflied (aka "spatchcocked")? I am able to get a 15-16 pounder done in about 1:45 (give or take) starting it at 500 degrees for about 45 min (tented to preserve skin and keep from burning) and then lowered to about 350 for the remaining time until interior comes to right temp. Let me tell ya, brah...juiciest bird you'll ever eat! Every non-turkey eater I encounter is blown away at how juicy and tender my bird is...like roast chicken.

I do that with cornish hens......delicious! I think it is cooked best in a brick pizza oven :thumbup:

I'd tried half a dozen times to 'pick up' on this clip,,, but couldn't hear/ make out what it's about,,, but I DO HAVE THAT DVD,,,:lmao:,,prolly end up watching it tonight now,,, AFTER this chili pepper music video I've got( music is my aeroplane rolling right now:cool:) running in the dvd,,,:thumbup:

Copy! I've prolly tried to watch this movie a dozen times ,,,but,,, oddly I tend to lose focus,,, not saying it's a unworthy flick( hell's a'fire, I went out and bought it) prolly because I drink and JACK BLACK really needs to kiss my eastwing framing hammer! ,,er,,,I guesso_O

Man!,, that sounds pretty good!,,, if I didn't distrust people ,,,from my learned back trail,,,,you'd probably be an agreeable culinary dining compatriot,,, cuz' that really does sound pretty enjoyable.:thumbup:
