Smoked turkey, wild rice and cornbread dressing, green bean casserole, and for dessert bourbon maple pecan pie... All served with copious amounts of bubbly!

It is just my wife and I this year. Nonetheless, we decided to go all in with a traditional Thanksgiving dinner.

In addition to Turkey, dressing and traditional Thanksgiving dishes, every year for the last 30
I set up my smoker and smoke salmon.

I brine them overnight in brown sugar and salt. That draws out the extra water. Then I smoke them with alder wood for about eight hours on low 165 degrees or so. At the end I might turn up the heat so they are cooked enough.
 
There are only 4 of us. Usually we host for 25-30. Not sure how I feel about that.

Turkey, smoking a little ham, mashed potatoes, sweet potatoes, corn bread casserole, brussel sprouts with pancetta and pomegranate seeds (that’s my specialty), pretzel salad, and green beans.

We ordered pies too. Dipped into those last night. That would never happen. Collectively we will gain 15-20 pounds. Leftovers for a week.

Stuffing and gravy too. How can I forget that. Stuffing is probably my favorite.
 
PSA on Deviled Eggs btw... If you are in Atlanta Holeman and Finch. Simply Amazing! In New York (if that dump can ever recover) Jacob’s Pickles. Both places are great bar/southern comfort food places. Man I love Deviled Eggs!

Can eat 20-30 of them in one sitting. Probably one of my favorite foods.

Love my fiance to death, but she can't make them like mama does.
