Children Fajita taco in flour tortillas with guacamole and Mexican rice. What's on your plate?

Wow, sounds almost identical what I'm going to make and eat, Coach! I will be baking some cut beef and chicken fajitas in the oven marinated in olive oil, soy sauce and lemon juice, a touch of chili powder, cumin and garlic powder, plus some sliced tomatoes, red & green bell peppers and some white onion. Serve it up as tacos with guacamole in flour tortillas with some charro beans and Spanish rice on the side. Salud!

This has been my post for about 7 or 8 years. Special meaning behind it, but if it means that much to you, have at it.
I started this in honor of my late mother.
Every Sunday she would make an extra special meal. Great memories of me and my 3 older brothers fighting for the leftovers!
 
Mexican frito pie

I layer about two inches of fritos in a casserole dish then cook up some hamburger meat in a taco seasoning packet with extra cumin. I then mix in two cans of cheddar cheese soup and pour over the fritos. Give it a good mix then layer it with various shredded cheeses and bake until nice and melted. I guess you can put some beans in it if need be but I ain’t got time for that! I forgot to mention that a can of enchilada sauce is added to the beef mixture.

I like to wrap it up in a soft tortilla, my version of a crunch wrap :thumbup:

Just lit the Big Green Egg. Ribs to go on shortly. Probably not competition style, but "fall off the bone" type ribs that I can hopefully make Rib Sandwiches with this week.

Chili simmering in the pot all day to hopefully be ready by the end of the Cowboys game.
