I shared a room i with this guy called Chico in the military, every Christmas his family would send him canned vegetables, carrots, onions, it was so hot the outside of the can which start to decay, lol oh my God, the carrots, unbelievable

My mom used to make enchiladas with wolf brand chili...no beans. My dad makes them now...delicious.
Fry corn tortillas, lightly, put cheddar cheese, roll em up. Put them in a rectangular cake pan, spread chili over it...spread it to cover the whole thing. Sprinkle a little more cheese and put some onion slices on it. Cover with foil, bake till cheese is melted

Texas Chili has no beans...

TexMex does....mom made it with beans...only one I liked with beans
..and my wife's. When i was engaged, my wife cooked like her mom...I didn't like it...she spent many days with my mom and learned to cook all my favorites like my mom did. She still makes me homemade flour or corn tortillas, from time to time. Lol...HS valedictorian and honors grad at UT and she make me tortillas!!! Lol

Was gonna do home made chili since it’s been raining for days here in SoCal, but opted for some ribeyes in the air fryer, Pease, corn, Brussel sprouts and Mash potatoes.

Welp.... for last night's clash of the Titans with the turbo charged Lions against the Irresistible Force that is the Eagles, I paired that game with a bone in ribeye, twice baked potato, lobster tail, and a fairly expensive bottle of merlot

Tonight....with the Raiders v the Cowboys, I think I'll have a ham sandwich on wonder bread...with a Yellow mustard pack leftover from McDonalds.

To drink: water. Room temperature.

Had a great weekend with my wife, daughter, son in law and dog, in Los Balcones CC, North Austin......so good, that I didn't even care that the Longhorns got beat up by Georgia. Today, back to reality....gotta cut a couple of trees down, visit my dad and get ready for the game. Keeping it simple...turkey, pepperoni, cheese and avocado roll ups with celery sticks and spicy pork rinds. Low carbing it!!! Win or lose, I don't care...Jerry won't ruin this weekend. Salud!

My brother and his wife from Texas visited us this week in Montana. They can't stay through Thanksgiving, so we thought we would celebrate Thanksgiving early.... so, our game-day menu was standing rib roast, green beans, garlic mash, salad and a fine bottle of cab sav. A great time was had by all.
