There are tons of great answers but I believe it comes down to 2 guys; John Niland and Jethro Pugh.

John Niland played for 9 seasons with the Cowboys at LG and was named ALL-PRO 3 times along with 6 Pro Bowl appearances in addition he
is arguably the best Pulling Guard in Cowboys history.

Jethro Pugh played 14 years with the Cowboys. At LDT he lead the Cowboys in sacks 6 times. In addition he was a Brilliant run defender.
He was criminally overlooked when it came to Post Season Honors. From 1967 to 1972 he had seasons of 9, 15.5, 13, 13.5, 13.5, 8.5 sacks and he was 2nd team ALL-PRO in 1968 but was never chosen for a Pro Bowl.

I think even though both are way underrated, I think Jethro Pugh is the choice.
Other than more obvious near HOF notables: Dat Nguyen, Jeff Heath, Dexter Coakley, Terry Glenn, and Darrin Smith come to mind.

It's beyond shocking to me to see people underrate the all time greats such as Witten, Ware, Meredith, Jeffcoat, Mel Renfro, and Danny White. And then they'll turn around and prop up boneheads like Dez.
Too Tall Jones never missed a game in his 15 year career with the Cowboys started all of them

Darren Woodson. Kinda got overlooked nationally the 2nd half of his career playing on some bad teams and surrounded by a lot of mediocre players in the secondary. It cost him a HOF spot.

Danny White.
Jethro Pugh
, he maybe one the most unappreciated, rather than underrated.
Aaron Kyle.
Doug Cosby.
Robert Newhouse.
I was wondering how long I would have to scroll before seeing Danny White. He had the misfortune of being in between Staubach and Aikmen while playing the bulk of his career against Montana.

Many of us disagree I don't wanna hear about the era and how everything was different and how he had to play against Joe Montana his mistakes who we talk about all the time with robo and Prescott he has an upside down touchdown interception ratio in the playoffs and his regular touchdown interception ratio isn't much better so I'm gonna tell you right now he got lucky being on this team full of all these superstars and it might just be very well it was him that failed the cowboys and not bein....e oh we had to go against joe montana... No that would be the defense that went against Joe Montana we have one of the best defenses in the league and yeah they may have struggled against him but it didn't help that one day anyway is guilty of being the one of the most turnover prone quarterbacks we've ever had literally is the definition of a choker if you listen to the pundits around here.... He cost his team field position the ball and the ability of time of possession and to score more points that is what turnovers do you gonna sweep under the rug that this was the worst of all our quarterbacks when it came to turning the ball over at inopportune times is it that we called a choker was he not a deer in the headlights?

Please don't try to defend it because I will look you in the eye someday and tell you how you're a hypocrite...
Danny white is not underrated he is far overrated IMHO

Look at Harvey Martin 23 sacks in 77 I believe, how he isn’t in the HOF is beyond me. Not in the ROH, a SB mvp it’s really sad to say the least
He got overshadowed by Randy White.

Here's a few:

Mike Gaechter - played 8 seasons, had 21 career interceptions playing corner as a rookie, and then strong safety. Had a 100 yard interception return as a rookie, and had his career cut short by an Achilles tear in his last season.

Larry Cole - indispensable role player as an end and tackle for many great teams. He played in five Super Bowls, and it was his tackle for a loss of John Riggins on a third and short play in the 1979 game that set the stage for Roger Staubach's final 4th quarter comeback.

Blaine Nye - started at guard for 8 seasons, and was a key cog in the offense that won Super Bowl VI. Besides, he was one of the founding members of the Zero Club!!!

Preston Pearson - literally invented the third down running back position with his pass catching skills out of the backfield. First player to play in Super Bowls with three different teams (Colts, Steelers, Cowboys). Former college basketball player at Illinois who transitioned nicely to football.

Kevin Smith - prior to the Achilles tear, he was one of the best cornerbacks in the NFL.

La'Roi Glover played 4 seasons in Dallas and made 4 straight Pro Bowls.

A lot of those early 2000s defenders were underrated. Glover, Ellis, Newman, Nguyen, etc. Those four in particular were just as good as the starters on our 90s championship teams, and if they had the triplets playing on offense, they would've won Super Bowls and all gone down as Cowboys legends. But they didn't get to play with the triplets. They got to play with Quincy Carter, Troy Hambrick, and Joey Galloway.
