He's actually barely 30 years old. He turned 30 on July 1.
Drafted back in 2014 - seven years ago.
On the practice squad for his first five NFL teams - Rams, Patriots, Lions, Raiders, Panthers.
Did not make an active roster until mid-October 2017 -Panthers.
Cut the following preseason - Carolina resigned him late 2018 when QB1 Cam Newton and QB2 Taylor Hienicke were shelved. Gilbert was the backup to no. 3 QB Kyle Allen in the season finale. Allen was injured - thus providing the first time Garrett Gilbert entered an NFL game.
After his truncated AAF season, the Browns picked him up for the 2019 season; Gilbert made his 2nd NFL appearance in a relief role loss mid-October 2019.
He was then relgated to Cleveland's practice squad for 2020.
When Dak was injured and placed on IR last season, the Cowboys went and got Garrett off CLE's PS after Dalton' COVID issues and DiNucci's ineptness.
So... for an NFL QB who's barely 30 years old (two weeks ago tomorrow) - the guy is beginning his EIGHTH SEASON in the NFL with only one start.
To sum my paragraph up -- that resume does not grant Garrett Gilbert as the favorite to be Cowboys' number two QB for this upcoming season.

despite all that, I saw him play in aaf, and he looked good there.
He does have ability. and the aaf gave him the experience he needed.

It is very hard to unseat starting qb's or # 2's , it is usually injuries that give guys a break.
Dak would have been on the bench for years, and maybe wound up on ps, if not for injuries to kellen and romo.
