Williams can catch away from his body. How would he have made the third down catch in Seattle otherwise?
Of course Williams can catch with his hands, but that doesn't give him a wide catch radius unless he can do it consistently. Even I can catch a football with my hands. The problem here is that TWill isn't a natural pass catcher. He doesn't have that talent, but he can develop that skill. If you don't have that skill then all that other talent goes to waste. It even diminishes his terrific size and length. He might as well be playing with the same body as Cole Beasely if he can't catch balls anywhere outside of his numbers on a consistent basis. It only takes a few times for him to miss a catch on a less-than-perfect throw for a QB to lose trust in him. For a guy like Dez, all you have to do is throw it in his general vicinity and he will go up and get the ball just like every other superstar big receiver in the league. As Romo said last year about this problem when TWill disappeared for several games, "He just isn't open." He's not fast enough to just run by defenders and get wide open. Someone will always be near him so he will need to compete for the ball. You need to catch with your hands to do that consistently.
I think his main problem is that he lacks the confidence to catch with his hands during games because he's not a natural at it. I bet in practice he's pretty terrific. Irvin had some interesting things to say about this as well. When your arms get tense because you're trying so hard, your hands are no longer "soft" and balls begin to bounce off you.
Personally, I'm really rooting for the guy. I like TWill a lot, but the problem with his hands is a very big problem.
