Extra Sharp Cheddy Ched is a beast!

We doing a tostada con pollo using a rotisserie chicken.

And I gots to pull my beef out of the marinade! I forgot!

Jerky about to be in the drier.

I like the Sam's rotisserie chicken and they are cheap. Thought I was cooking a small trimmed brisket last week I was wrong I made jerky slab jerky to make it sound all fancy

Ive ruined a few, but they are too expensive to turn into charcoal these days, so just a couple basic rules to smoke by.
Trimmed is fine, just make sure its not over trimmed and there is some good fat cap, always up.
Keep the the temp around 230f
I cheat now after 6-8 hours of low and slow smoke, and wrap in foil, some purist prefer paper, doesnt matter... this last step I found is such an easy cheat, and you get wonderful brisket every time rather than a 100 dollars worth of burnt beef jerky... :D
