So Paula may call what she makes Southern food but it doesn't represent what a lot of the cooking in the South is.
Agreed. My mother is from Mississippi & is a great Southern cook... but she never made Krispy-Kreme burgers or deep fried lasagna or any of the other extreme things that Paula comes up with.
Type 2 diabetes primarily comes from carrying excess body fat (obesity), which her food is guilty of causing. So does other foods, of course, but her recipes are generally over the top.
I read that she hid her diabetes for over 3 years. The only reason it came out was that the drug/treatment company she now is a spokesman for approached her about altering some of her recipes to be 'diabetic friendly'. She responded, "how did you know I was diabetic?" And that is how the story got out. She didn't volunteer it, it just slipped out. Now, some in the media are demonizing her for hiding it while others are saying she is courageous for talking about it. Truth is, she is neither courageous nor is she a demon.
While I think it would have been responsible and admirable of her to have been forthcoming about her diagnosis & used her celebrity status to help others prevent themselves from falling into the same trap... I don't think its fair to be disappointed or shocked that she did not do this. Not everyone fits in the Superman outfit... (especially Paula
