The Paula Deen controversy

I am diabetic. Sometimes, of a Saturday morning, on the rare occasion that my wife and I have the time, we sit in bed and watch Paula Dean on the cooking channel. I know and understand what I can eat and how certain foods and or styles of cooking effect me. I don't honestly need anybody to tell me that the Paula Dean show is an example of what I can not do in my life. I have a full understanding of that. Any Diabetic should. It is not as if the information is not out there for anybody to learn and understand.

Paula Dean owes nothing to me or any Diabetic. She also owes nothing to anybody else out there. You don't want to watch her show, don't watch. As for me, my wife and I like to watch it so we do and guess what, my Blood Sugar levels don't spike at the sight of Paula Cooking stuff. Just not how it works folks.
 
my father-in-law was diagnosed with type 2 diabetes in 2010, & what upsets me is that the kinds of foods that paula deen makes on her show can be made in a way that a diabetic can enjoy them as well yet she said that she has no intention of changing that because that's how she cooks.
 
Paula Dean should be able to keep her health issues private . There is no debating that . I am sick of these people minding other people's business . Being from Mississippi , I am well aware that some of our cooking is unhealthy . I don't care . I eat fried foods daily . I drink Coke like there is no tomorrow . I smoke like a freight train . I salt all my food . IT'S MY BUSINESS .

If you use crushed raw garlic to season your food as it is cooking, it will put healthful compounds in your food that help fight diabetes and also slicken the blood so that blood clots don't form and so minimizing the possibility of a heart attack or stroke. Adds great flavor, and makes you feel good, too.

Lard is only unhealthy because of the way the hogs it comes from are raised in confinement farms where they never get outside. Diseases are rampant and have to be kept under control with heavy applications of antibiotics and they are given growth hormones to put on weight rapidly. All this and their diet results in their fat being high in omega-6 fatty acids and that leads to the health consequences associated with it.

However if the lard is made from pigs who live their live out in nature eating their natural diet and are not given any growth hormones then crowding diseases do not develop and the fat from those pigs is high in omega-3 fatty acids that are beneficial and prevent the formation of the things that have given pork a bad name. Pastured pork is beneficial instead of harmful, as is the lard made from it.

Same with the butter made from milk from cows raised similarly and fed a straight diet of grains and they never get to eat grass, their natural food. I believe their milk is not healthy nor is the butter made from it while butter from pastured grass-fed dairy cows is beneficial because of the omega-33 and other things.

It is not so much the food that is making people sick but the ways it is raised and finished and processed. You can't get grass-fed or pastured pork or chicken in most stores and you have to Google to see if there are any sources near you.

Going back to the old ways of raising food will cure a lot of ills but not everyone can find it or afford it. The corporate food supply is the only option for most these days and that has dreadful long term consequences for individuals and society as well.

People just have to do the best they can these days.

I'm not even sure that I know who Paula Deen is in order for this to be anything that I should find upsetting.

Hey I love to eat. As though I need to cut down on my sugar and eat more veggies and fruits. But I love to cook though!
