According to by Albert Breer of Sports Illustrated on Monday, Schultz rejected a three-year, $36 million contract “at one point”. Schultz opted to play on the $10.9 million franchise tag in 2022 and is currently a free agent.
“One gamble that hasn’t worked—Cowboys TE Dalton Schultz betting on himself and playing on the franchise tag in 2023. Schultz had a three-year, $36 million deal at one point. I get why he’d pass that up. But the fallout hasn’t been pretty. Schultz played on a $10.9 million franchise tender last year, and now he’s unsigned and still on the market about a week into free agency.”

TE market never really heated up this free agency period. Can't blame the man for trying, but obviously didnt work out. He'll get another chance next year.
He overvalued himself.

He is a solid TE, but he lacks big-play potential and is not the greatest of blockers. Most teams want an athletic TE that can stretch the field, that is not Schultz.

This is a TE draft, he just gambled and lost.

Didn't work out for him but still walks around with F U money for the vast majority of the population and his family is set for generations

Like someone else stated most teams want a physical TE who can stretch the field and block.
